Keto Peanut Cookies


This brings the regular keto peanut butter cookies to a whole new level - add in some raw peanuts for delicious cookies - only 3g carbs per cookie.   

Ingredients

1 cup natural peanut butter (no sugar / no salt)
1/2 cup sweetener (I use Monkfruit sweetener)
1 teaspoon of pure vanilla essence
1 big egg
1 cup raw peanuts

Method

1.  Heat your oven to 180oC.
2.  Line a cookie sheet with baking paper
3.  Mix all ingredients together in a bowl.   The mix will quickly form into a good dough.
4.  Roll tablespoon sized balls in your hands and press flat on the cookie tray (will not spread)
5.  Bake for about 12-14 minutes or till edges just brown
6.  Allow to cool on the tray
