Minecraft Party

We have a plethora of birthdays over the May/June/July period in our home. Well, with six children it always seems to be somebody's birthday! This year we gave in and let three of our children have birthday parties. Unfortunately for us, due to the ridiculously extravagent and over the top organisation, decorating and intense attention to detail of previous family parties...the expectations were high high high!! Gluten Free Almond Cake

This is such a beautiful cake - adapted from Belinda Jeffreys almond cake I substituted the sugar for monkfruit sugar. Ingredients 180g almond meal 2/3 cup (60g) desiccated coconut 1/4 teaspoon salt 250g castor sugar (I used monkfruit sugar) 4 x 60g eggs 1 1/2 teaspoons vanilla extract 1/4 teaspoon almond essence 200g unsalted butter, melted and cooled 2 tablespoons flaked almonds icing sugar, (optional), for dusting Preheat your oven to 180C. Butter a 23 or 24cm shallow spring form cake tin and line the base and sides with buttered baking paper. Dust the tin lightly with flour (or rice flour if you’re avoiding wheat) and set it aside. Put the almond meal, desiccated coconut, salt and sugar into a medium-sized bowl and whisk them briskly together with a balloon whisk for 1 minute. In a separate bowl, whisk together the eggs, vanilla extract and almond essence until they’re thoroughly mixed, then mix in the cooled butter until it is incorp

Chocolate Mud Cake - very easy, super thick and moist

I've tried baking many many MANY mud cake and chocolate cake recipes over the years, recipes from scratch, recipes using boxed packets, recipes others recommended on the internet and FINALLY have found what I feel is the perfect, super thick, moist, delicious chocolate mud cake recipe EVER. It always works (even if you don't measure the ingredients perfectly), and you can simply double it if you want to do a huge tin. It is extra especially delicious if you make the chocolate ganache to go on top! Basically if you see chocolate on sale - buy two blocks and you can make this with the icing. Soooooo good, your friends and family will be begging you to bring it to events. AND you will never want to buy another mud cake again because you will have this SECRET recipe!
