Condensed Milk Caramel



How to impress someone?  This is it.  Delicious, creamy, dreamy, sweetness perfection.  So, so simple.  Caramel made this way is so much better than purchased caramel - absolutely fabulous swirled through ice cream, the perfect filling for pies and tarts (we're thinking of a pretty fantastic banoffee pie right now).  Incredible popped in between biscuits as a sweet filling. 


And... as a good side note... a jar of bought caramel is about $5.  I bought a can of condensed milk for $1 and made this!


Ingredients:
1 x can of condensed milk


Method:
- remove the label from the can
- pop the can into a large deep saucepan
- cover the can with water
- boil on the stove for 3 hours
- keep an eye on it - you need to keep the water level just over the top of the can - I have my kettle nearby and just pour a bit more boiling water on top every 20 minutes or so.
- after 3 hours carefully pour off the hot water and leave the can to cool
- when it's cool to the touch pop it in the fridge
- by then I usually can't wait any longer and open it, then transfer your perfect caramel into a container with an airtight lid and keep in the fridge.
