Library Bag

It seems impossible to buy a nice library bag, unless you want to either spend a lot, or buy something awful!  Therefore, the only option is to make it yourself.  A good strong cotton fabric, doubled up and two double stitched handles.  Tomorrow I have to make another one for my son (in boy fabric of course), so will put a step by step tutorial for those of you who would like to make your library bag.  Total cost $4.00 :)

Vegan Chocolate Cupcakes

Cake Ingredients

1 1/4 cups flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp distilled white or apple cider vinegar

Chocolate Glaze

1/2 cup sugar
4 tbsp margarine
2 tbsp soy milk/ rice milk
2 tbsp unsweetened cocoa powder
2 tsp vanilla extract

Note: if you don't care to make it vegan, or don't have soy milk or margarine, you can use butter in place of the margarine, and whatever milk you prefer in place of the soy

Scones

 What's in the cupboard?  Butter, flour, milk - scones for afternoon tea!

All you  need is:

80g room temp. butter
450g (3 cups) self raising flour
1 tablespoon caster sugar
250ml (1 cup) milk

Preheat your oven to 220oC (Hot)
 Mix flour and sugar together in a big bowl.
Add the butter cut up in little cubes and rub in with your fingertips till the mix is like fine breadcrumbs.
 Add in all the milk and mix through with a butter knife.
Knead VERY gently (to keep air in the mix and not to activate the gluten too much... or your scones won't rise nicely) until you have a nice big ball of soft dough.
 Roll out on a floured board to about 2cm thick
 Cut circular disks out of the dough.  Haha, I don't have a circular cutter, so use a glass
dipped in flour.
Bake in your hot oven for 10 minutes.
You can tell they are ready as they will be slightly brown on top, or when tapped sound hollow... or insert a skewer and it will come out clean.

Enjoy warm with a dollop of butter, or simple jam and cream (the kids love them with Nutella and cream!)

Mild Yellow Curry

Simple and delicious.  Even the kids love it.  You will need...

1 kg chicken breast sliced thinly
2 tablespoons yellow curry paste
1 x 400ml can coconut cream
2 cups chicken stock
1 x bunch fresh coriander
1/4 cup plain flour
cooking oil

Method:

 Cut up the chicken and coat with the flour.  The flour will stop the chicken from going too tough.
Heat the oil in your pan and gently fry the chicken till just browned.
Add the curry paste (you can use green or red if you like) and cook until all chicken is coloured.

 Add the stock, coconut cream and finely chopped coriander.
Heat through and serve immediately with freshly steamed rice.

This feeds our family of 8 (well, the baby doesn't eat any)
with enough for seconds and left overs for a couple of you for lunch the next day!
